A few dried herbs can completely transform some basic veggies and this sheet pan supper is a shining example. Accompanied with a strawberry salad that has been dressed with a quick homemade dressing. 

I love simplicity and sheet pan dinner is the definition of that. Pile everything on a pan, toss it into the oven and call it dinner. A salad is always our go-to side so I dressed it up with strawberries and a super simple basil dressing.

I cooked 10 sausages thinking that would be plenty for my brood but boy was I wrong?! By the time my little boys finished eating they only left The Hubster and me 1 sausage a piece. We conceded and chowed down on baked veggies and salad (that’s the best part in my opinion, anyway).

My original plan was to pile these assorted sheet pan ingredients into a warm hoagie roll but it was just my luck that when I opened the supposedly “fresh” rolls they were sporting a fresh layer of mold at one end. Yuck…and disappointing. These sausages and vegetables were plenty as is, with a side of hot mustard.

Basil Garlic Strawberry Salad
Instructions
Brat, Pepper & Onion
  1. Preheat the oven to 425 F. Line a sheet pan with foil and lightly spray with cooking spray.
  2. Combine all of the veggies in a bowl and mix with the onion, mushrooms, bell pepper, garlic, oregano, salt, red pepper flakes, and pepper. Toss with olive oil.
  3. Spread out on the prepared sheet pan.
  4. Top with the sausage. Bake in the upper third of the oven for 45-60 minutes or until the veggies are slightly charred. Turn the sausages half way through.
Basil Garlic Strawberry Salad
  1. Place the washed and prepped salad in a large bowl and place the sliced strawberries on top.
  2. In a small bowl combine the olive oil, dried basil, garlic salt, and pepper and whisk thoroughly.
  3. Right before eating spoon some of the olive oil basil dressing onto the salad.
