A crunchy little cookie dipped in minty green icing and rolled in unsweetened coconut. Oh, so delicious!

It’s been a warm Christmas so far and I have been craving something cool and minty in all this warmth.

I’m usually not a huge fan of coconut but these little morsels are down right delicious!

The cookie base has simple ingredients that you would expect in a cookie with a surprise bite of oatmeal. They are actually not made with granulated sugar but with powdered sugar!

After they are baked they have a wonderful texture that is similar to a crispy butter cookie. Not too dry and/or crumbly and not overly sweet. The mint in the icing is a nice change of pace from the type of cookie I’ve been making up to this point. Like a refreshing palette cleanser.

We have officially made cookies for 10 days now! That is SO MANY COOKIES12 Days of Christmas Cookies has been a success so far and all the guys that work with The Hubster (including my Father-in-law) have enjoyed the treats every day!

Even my boys are getting kind of tired of cookies – all they wanted for dessert today was roasted strawberries with warm soft cheese and a few crackers. Which was totally fine with me!

Minty Snowballs

Cookies
  1. Preheat oven to 325 F
  2. Cream the butter and gradually add the sugar until fluffy and incorporated.
  3. Add the water.
  4. Add the flour and salt and mix thoroughly.
  5. Stir in oatmeal.
  6. Shape the dough into approximately 1" balls and place on an ungreased sheet. Bake for 25-30 minutes.
Mint Frosting
  1. Blend the sugar, milk, and mint flavoring. Add green food coloring until desired mint colored.
  2. Dip the cookies into the frosting and roll into the coconut flakes. Set on a sheet of parchment to set.
