We have soup once a week – per the decision of my big boy, Bubba. We wanted chicken soup this week but also something a little different than our usual standbys; chicken and dumplings and chicken noodle soup. Which, don’t get me wrong, are always delicious and are magic on a winter cold (or the winter blues) but we were craving something different.

That’s how this chicken & Brown Rice soup was born! We scoured our pantry and fridge, threw some deliciousness in a pot, and brought it all together with a few hits from my spice cabinet (do I need to mention how much I love dried herbs? Especially the ones that my Momma has dried and bottled herself for me!).

Needless to say, and I’m sure you can relate, we are incredibly busy ALL. THE. TIME. So, even though I love to cook and experiment in the kitchen, sometimes I want to zone out and take it easy. That’s where these one-pot meals come in so handy!

A little chop chop here and there, open a few cans and/or bags, into the pot, stir, and cook – BAM – dinner. A garnish of parmesan is always a plus too. Soup is the ultimate zone-out-and-relax kind of meal. I can get school prep work finished while it boils away or laundry (which never really gets done anyway, if I’m being honest) or maybe just chill with my feet up and snuggle my boys.

It always comes out beautiful, delicious, and fills up five hungry tummies.

One of my go-to soup ingredients is fresh spinach. It is super healthy, provides a nice texture to the soup, and when it’s wilted and soft The Hubster LOVES it. He likes it better when it’s boiled in butter, garlic, and a splash of white wine but c’mon…I can’t make it that way every time.

The brown rice is magical also. It’s so much easier to digest than white rice, it adds a nice mouth-feel and texture, and it helps keep little tummies full longer. So, no one’s woken up at 2 AM with hungry pangs – we’ve all been there, right? On the rare occasion that happens to my boys, they act like bears in the morning; grouchy, starving, and kind of snappy. Good thing that’s not very often.

Homemade Chicken & Brown Rice Soup

Instructions
  1. In a large pot heat 2 tablespoons of extra virgin olive oil over medium-high heat. Add the chicken and brown on both sides (no need to cook it all the way through, that will be done later). Remove the chicken to a clean plate.
  2. Heat 1 tablespoon of extra vigin olive oil and saute the onions and garlic until golden in color, about 10 minutes.
  3. Add the spices; basil, sage, and paprika. Stir well.
  4. Add the tomatoes (with juice), chicken, carrots, broth, water, and rice. Bring to a boil and reduce heat to simmer. Cook, uncovered, until the chicken is cooked through, about 30 minutes.
  5. Remove chicken and shred. Either with two forks or my super simple method (*see note). Return the chicken to the pot and add the spinach. Stir until wilted.
  6. Check for salt and pepper. Ladle into bowls and garnish with parmesan shavings.
Recipe Notes

*NOTE: To shred chicken with ease, toss the whole cooked breasts into the bowl of a stand mixer fitted with a paddle attachment, mix on low and the chicken will shred itself. Then just return to the pot! Bing-Bang-Boom!
