This is the cake to make someone fall head over heels in love with you. It’s fudgy, it got a chewy marshmallow edge and a deep and lovely chocolate flavor. Not to mention it’s made with the best soda of all time – Dr. Pepper!
When this was cool enough to steal a fork full off of the edge Bubba and I taste tested it and I think I saw him melt into a puddle of pure joy on the floor. His little eyes lit up and he just stared at me for a moment until this sound of exhilaration burst from him – he was in love.
I’m glad I decided to experiment for National Chocolate Cake Day (January 27) because I ended up baking the best cake I have ever had IN. MY. LIFE. Chocolate for me and Dr. Pepper for The Hubster. A match made in heaven. About this national “holiday”, who decides all these food holidays? What does January 27th have to do with chocolate cake? Seriously, could someone clue me in?
It’s fudgy and laced with Dr. Pepper. It’s delicious. It is perfection in chocolate cake form.
My Soda Inspiration
I was inspired to do this cake from my featured cookbook of the month. This particular book is so ramshackle and torn up that I can’t even tell where it came from so all month I’ve just been affectionately calling it, the book.
The original that inspired me is titled Chocolate Coke Cake. The second I saw that I thought of The Hubster’s love for Dr. Pepper. He drinks at least 2 every day and every morning I usually have to clear away the empty bottles from what he drinks during the night (at 2 but sometimes 3). The rest of us aren’t big soda drinkers but he can get very grumpy without them. Like how I get when I run out of coffee.
My original intent was to make a bundt cake and drizzle this tantalizing Dr. Pepper chocolate sauce over the top but I underestimated the stickiness of the marshmallows. After that sugary layer of marshmallows melted in the hot oven, they created this chewy, sticky crust. Even though I used my Secret Pan Coating it was not budging. And when I scooped out this cake and saw the fudginess of it I realized that it may not be pretty but dang it tastes so good.
After I sampled a few more bites I shot a text to The Hubster saying, “You are going to fall in love with me all over again” to which I’m sure he thinks I’m a little bit coo-coo – O well!
